Pressure cooker rice pudding (lower fat version)

  • 1 cup parboiled rice
  • 1 1/2 cups water
  • 1/4 tsp salt
  • 2 cups fat free half & half, divided
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 tsp vanilla
  • 3/4 cup raisins
  • Cinnamon, to sprinkle on top
  • Whipped cream, if desired
  1. Combine rice, water, and salt in pressure cooker.
  2. Cook on high pressure and high heat for 3 minutes.
  3. Unplug pressure cooker.
  4. Wait 10 minutes natural pressure release, then quick release remaining pressure.
  5. Add 1 1/2 cups fat free half & half.
  6. In a small mixing bowl, combine remaining 1/2 cup of fat free half & half and 2 eggs, beat well.
  7. Pour through a mesh strainer, into the pressure cooker.
  8. Plug in the pressure cooker again and cook on low heat, uncovered, stirring constantly, till mixture is bubbling.
  9. Unplug pressure cooker, again.
  10. Remove pot from pressure cooker to stop the cooking.
  11. Stir in raisins and vanilla.
  12. Transfer pudding into a bowl or container.
  13. Let cool 20 minutes, then serve warm, topped with cinnamon and whipped cream.
  14. Chill any left over pudding and serve cold. (add additional half & half before serving, if pudding is too thick)
