[RECIPE] Pressure cooker rice pudding (lower fat version)

- 1 cup parboiled rice
- 1 1/2 cups water
- 1/4 tsp salt
- 2 cups fat free half & half, divided
- 1/2 cup sugar
- 2 eggs
- 1/2 tsp vanilla
- 3/4 cup raisins
- Cinnamon, to sprinkle on top
- Whipped cream, if desired
- Combine rice, water, and salt in pressure cooker.
- Cook on high pressure and high heat for 3 minutes.
- Unplug pressure cooker.
- Wait 10 minutes natural pressure release, then quick release remaining pressure.
- Add 1 1/2 cups fat free half & half.
- In a small mixing bowl, combine remaining 1/2 cup of fat free half & half and 2 eggs, beat well.
- Pour through a mesh strainer, into the pressure cooker.
- Plug in the pressure cooker again and cook on low heat, uncovered, stirring constantly, till mixture is bubbling.
- Unplug pressure cooker, again.
- Remove pot from pressure cooker to stop the cooking.
- Stir in raisins and vanilla.
- Transfer pudding into a bowl or container.
- Let cool 20 minutes, then serve warm, topped with cinnamon and whipped cream.
- Chill any left over pudding and serve cold. (add additional half & half before serving, if pudding is too thick)
