Vegan Zulbia (زولبیای وگان) or Jalebi is one of my favorite Persian Pastries. It has simple recipe but for cooking this delicious pastry, you need to know some tricks. I have tried it after several years, which I have not chance to eat #zulbia and here is outcome. Zulbia, also known as Jalebi, is a sweet popular in countries of South Asia, the Middle East, North Africa (except Morocco) and East Africa. It is made by deep-frying a starch and yogurt batter in pretzel or circular shapes, which are then soaked in sugar syrup. They are particularly popular in South Asia during Ramadan and Diwali. Ingredients For batter: 200 g potato starch 20 g wheat flour 200 g vegan yogurt (I used soy yogurt) sunflower oil 1/6 tsp ground saffron 1 tbsp vegan butter 1 tsp baking soda For syrup: Concentrated agave nectar with addition of lemon juice and rose water. Direction: Combine all the ingredients for batter and mix them well. Keep them aside for 1 hour. Heat the oil in frying pan. Transfer the batter into the piping bag, and use a decorating tip of your choice. Deep-fry the batter. Transfer the fried zulbia directly out of frying pan into the syrup and leave them for about 3 minutes. Place them in a sieve for few minutes to drain the syrup.
